Feijoa & Date Loaf
I love loaves and I love feijoas. With a fruit bowl full of feijoas, I thought I'd set about trying to make a Feijoa loaf that is moist, delicious and good for you.
The good news! It worked and this loaf is moist, very delicious and a wonderful source of fibre, protein and vitamin C. Feijoas are a great source of antioxidants to support optimal health and healthy blood vessels.
This loaf is moist enough to be eaten alone, or you could enjoy it with a smidge of softened butter. I like to eat mine with a big pot of tea and my beloved tea cosy. A perfect afternoon tea but equally a perfect post-training snack or pre-dinner nibble.
Feijoa & Date Loaf
5 feijoas, flesh scooped out
4 eggs, preferably free-range
1 Tbspn melted coconut oil or melted butter (I used coconut oil here)
1 Tbspn melted honey
1/2 cup pitted dates, soaked in boiling water for 10 minutes, then drained
Pinch cinnamon
2 cups of ground almonds
1 Tbspn apple cider vinegar
1/2 tsp baking soda
Pre-heat oven to 180°C and line a loaf tin with baking paper.
Add all of the ingredients to a food processor and process until you have a smoothish mixture and everything is combined.
Pour the mixture into the prepared loaf tin and bake for 35-40 minutes or until just cooked.
