Cauliflower and Broccoli 'Mash'

Over the last week, I've made such an effort to increase my vegetable intake, particularly green vegetables. As I have been, and will continue to be (at least for the next week or so) totally inactive except hobbling from seat to seat, I wanted to make sure I felt as well as I could. This delightfully creamy green 'mash' is just the ticket to replace mashed potato. Perfect for those nights when you want more greens and a lighter meal. It's not so much 'mash' but a light creamy vegetable puree of sorts. But I like the sound of mash and it felt like I was eating mash so mash it is! It really is delicious.

The combination of broccoli and cauliflower provides a great source of fibre for healthy digestion as well as antioxidants to fight off free-radical damage. Given the vast array of damage that is caused to our body's each and every day by pollution, processed foods, alcohol, smoking and chemicals, a diet rich in antioxidants is vital for optimal health.

Enjoy this creamy nutrient dense 'mash' as you would mashed potato but notice how light you feel afterwards. I served this side dish with baked chicken and some extra greens - steamed broccoli with toasted sesame seeds. Broccoli is without a doubt a much loved vegetable in our house!

Cauliflower & Broccoli 'Mash'

Serves 2-3 as a side dish

  • 1/2 cauliflower head, broken into florets

  • 1/2 broccoli head, broken into florets

  • 2 Tbspns Extra Virgin Olive Oil

  • 1/4 cup freshly grated Parmesan cheese

  • 2 Tbspns milk

  • Freshly ground black pepper

  • Iodised salt

  1. Blanch the broccoli and cauliflower in boiling water for about 5 mins until the vegetables are a little soft but the broccoli is still bright green

  2. Drain the vegetables and place straight into in a blender and pulse until gently broken up

  3. Add the olive oil, Parmesan, milk, salt and pepper and blend until you have a smooth & creamy 'mash'

  4. Taste and adjust any seasonings or add extra milk or olive oil if needed
