Blueberry, Banana & Coconut Smoothie
Oh for the love of blueberries! These are such a great freezer stash to have on hand. Blueberries make great smoothies, not only for their delicious, nutrient-packed goodness but also for their gorgeous vibrant colour.
This smoothie is made with a classic combination of blueberry and banana but boy is it a winner. As they say...an oldie but a goodie! It makes a perfect breakfast or post-training snack and is a wonderful source of calcium, potassium and anthocyanins. Anthocyanins are antioxidants found in blueberries which help to support optimal brain health and memory. Something we could all use a helping hand with I'm sure! Blueberries have also been shown to help lower cholesterol levels.
You can add in a few handfuls of green leafy vegetables such as spinach or kale if you wish. It will add extra B-vitamins, fibre and iron and will simply change the final colour of the smoothie. A small price to pay for those extra nutrients!
Blueberry, Banana & Coconut Smoothie
Serves 2
1 cup frozen blueberries
1 banana
Handful coconut chips
2 Tbspns thick greek yoghurt
½ cup of milk (nut, soy or cows milk)
Handful of toasted coconut chips and toasted chopped almonds to serve
Place all of the ingredients into a blender or food processor and process until thick & creamy.
Pour into 2 glasses and top with toasted coconuts and almonds.
