Banana & Dark Chocolate Muffins
One lonely egg and three mushy bananas are all you need to make these delicious little muffins. Banana and dark chocolate are a great combination and you can whip these morsels up in no time. They are an easy treat, snack or lunchbox addition and you can make mini muffins, which would be perfect for children. Be frugal, don't waste any brown bananas! If you don't have time to make muffins, simply peel them and pop them in a snap lock bag to save for a later date,
Moist Banana & Dark Chocolate Muffins
~Makes approximately 12 regular muffins or 24 mini muffins
1.5 cups of brown rice flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp iodised salt
3 large bananas, mashed
3/4 cup of sugar (I used raw organic sugar but white sugar would be fine)
1 egg
1/3 cup butter or coconut oil, melted
Preheat oven to 175°C. Grease and line your muffin pans with baking paper.
In a medium bowl, sift together the brown rice flour, baking powder, baking soda, and salt. Set aside.
In a large bowl combine bananas, sugar, egg, and melted butter or coconut oil.
Fold the dry ingredients into the egg mixture until just combined
Spoon the mixture into muffin pans.
Bake the regular-sized muffins for 15-20 minutes and the mini muffins for appriximately 10 minutes or until just cooked.
