Maple Toasted Salted Walnuts


As I was cooking my porridge yesterday I got to thinking about nuts and what would be my ultimate nut. Using the analogy – “If I had to choose one nut to eat for the rest of my life, what would it be?” To my surprise, it didn’t take me long. It has to be walnuts! Apart from being one of the most delicious morsels on the planet, they can be added to just about anything. Baked goodies, salads, vegetables, nutritious truffles or simply eaten as they are - beautiful and natural straight out of the shell.

My life with walnuts changed when an old colleague of mine shared her recipe for Maple Toasted Salted Walnuts. Since I learnt of this simple yet utterly moreish way to transform walnuts, I have been roasting these delicious little nuggets and adding them to salads, cheese platters, nestling them atop of Green yoghurt or simply nibbling on a handful as a satisfying snack. Mum came over for lunch last weekend and I made a wholesome brown rice salad topped with avocado and these salted maple roasted walnuts. It was just delicious!

Maple Toasted Salted Walnuts

  • 2 cups walnuts

  • 2 Tbspns pure maple syrup

  • 1 tsp Iodised coarse sea salt

  1. Pre-heat your oven to 180C and line a flat baking tray with baking paper

  2. To a medium-sized bowl add the walnuts, maple syrup and salt

  3. Mix to combine and then pour the nut mixture onto the prepared tray. Roast the walnuts for 10 minutes or until golden brown.

  4. Once cooked, remove the walnuts from the oven and leave to cool

  5. Once cool, break up the walnuts and store in an airtight container
