Wholefoods + Botanicals Green Goddess Dressing


This Green Goddess dressing is so easy to make and adds a lovely nourishing bite to any salad. If you want a softer flavour, simply reduce the Apple Cider Vinegar to 2-3 tablespoons.

I added this dressing to a simple salad made of Thymebank greens, edible flowers and avocado served with a side of roasted Regal Marlborough Salmon. Store any leftover dressing in a jar in the fridge and use within a few days. I hope you enjoy it!

Creamy Green Goddess Dressing – makes ~2 cups

  • 1 garlic clove, peeled and chopped

  • 1 avocado, flesh only

  • 7-8 Tbspn water

  • ~5 Tbspn Apple Cider Vinegar (or reduce to 2-3 for a softer dressing)

  • 3-4 Tbspn lemon juice

  • ½ cup fresh basil leaves

  • ½ fresh parsley leaves

  • 1-2 Tbspn pure maple syrup or to taste

  • Coarse iodised salt

  • Freshly ground black pepper

  1. Place all of the ingredients into a high-powdered blender and blitz until thick and smooth.
